Quick Peanut Butter Bars

Ingredients
-1 cup dates, soaked in boiling water for 10-15 minutes and drained
-1 tbsp water
-2 tbsp smooth natural peanut butter
-1 tsp vanilla extract
-pinch of sea salt
-1/4 cup protein powder (can substitute with 1/3 cup oat flour + 1 tsp vanilla extract if you don’t have)
-1/3 cup oat flour (can be made using quick oats and a food processor)
-1/3 cup unsalted peanuts
-(optional) Melted Chocolate to drizzle on top
Instructions
1- In a food processor, mix the dates (drained) , peanut butter, sea salt and 1 tsp vanilla extract. Add in water if you feel the consistency is too thick (should be the consistent of caramel). Set the date caramel aside once smooth.
2- Using 1/4 cup of the date caramel, in a medium bowl gradually add the protein powder and oat flour. The consistency should be flaky but still hold together.
3- On parchment paper, spread the crust into a 1/2 inch thick rectangle. Spread the remaining date caramel on the crust.
4-Sprinkle the peanuts on the caramel (and the melted chocolate) and freeze for an hour. Optional toppings : melted dark chocolate and sea salt.
